Lot unique. Le titulaire assure, en qualité d'opérateur culinaire, la gestion et l'exploitation du restaurant L'Ichali du Mémorial ACTe ainsi que les prestations de traiteur événementiel : mise à disposition d'un chef et d'une brigade, approvisionnement, préparation et service des repas (snacking/cafétéria, déjeuners, dîners, brunchs dominicaux, soirées musicales, cafés littéraires), nettoyage et entretien des locaux et équipements. Les recettes de restauration sont encaissées pour le compte de la régie de recettes du Mémorial ACTe par des mandataires désignés parmi le personnel du titulaire. Le titulaire est rémunéré par un forfait mensuel assorti d'une part minoritaire de rémunération variable, par un bordereau de prix unitaires pour les prestations de traiteur et par un bordereau de prix unitaires pour les prestations supplémentaires de restauration. L'occupation du domaine public donne lieu à une redevance. Durée : 12 mois reconductible une fois (24 mois maximum) ; montant maximal : 1 200 000 € HT.
